With his heart and passion set on becoming the best sushi chef, he started working in London at Saga Japanese Restaurant between 1987 to 1995. Realizing to be the best sushi chef, you need to learn from the best. He started working with famed chef Nobu Matsuhisa at Nobu London between 1997 to 2003.
He learned style, technique and influences on dishes. Thereafter, he came to Beverly Hill’s to work at Nobu’s Matsuhisa until 2017. His dreams of opening his own restaurant was fulfilled by opening Umeda, a modern sushi establishment with many of the dishes has been influenced by his experience with Nobu Matsuhisa.
